New Year’s appetizer

24 units

  • 150 g Ísey skyr plain (could try vanilla)
  • ½ lemon (juice, bark for decoration)
  • 1 tbsp. honey
  • 1 tbsp. chopped fresh dill (more for decoration)
  • 2 x garlic gloves (minced)
  • Salt and pepper to taste
  • 6 x sliced white bread
  • 24 bites of smoked salmon

 

  1. Start by whisking together skyr, lemon juice, honey, chopped dill, garlic and spices, set aside.
  2. Toast the bread, cut off the edges and slice each unit into 4 pieces so you end up with 24 small pieces.
  3. Use a sharp knife to slice the salmon.
  4. Assemble: Put a dill dressing on top of each toast and then salmon. Decorate with dill and lemon bark.
